In this recipe I'll make Smoked Beef Enchiladas from scratch. I'm Smoking a Chuck Roast to use for my smoked beef enchiladas, but if you're new to grilling and smoking have never smoked a chuck roast, don't worry. I have a great tip right at the beginning of the video that will make this recipe easy and approachable for grillers and smokers every skill level. I'll also be sharing a tip for the tortillas that I haven't seen anyone else do so far.
This is not a hard dish to make, but it takes time. We'll be building these enchiladas by hand, one at a time. But once you're done and you take that first bite, all the time you spent will be well worth it.
