In this video I'll show you how to make smothered cabbage, which some also call fried cabbage. I love this dish so much and grew up eating cabbage all the time! It's a great one-pot meal that is easy to make during the weeknight for a large group of people. You can also feed a lot of people with this dish because cabbage is very affordable. When I cook smothered cabbage, I normally don't add anything besides onions and spices but today I wanted to show you how you can make this dish but also amp up the flavors! So I added spicy smoked sausage in the cabbage to add a smoky flavor, garlic, and red and orange bell peppers for an extra pop of color and taste! I cooked the sausage first to render some of the fat out and to deepen the flavor. Then I added the washed and cut cabbage into the dutch oven along with the onions, garlic, peppers, and spices. Sugar was added towards the end of the hour cooking (smothering) time to round out the flavors and provide balance. You can serve this with any protein you like from baked chicken to meatloaf, which is what I grew up eating smothered cabbage with. I hope you enjoy this dish and see you in the next video!
INGREDIENTS
- large head of cabbage, cleaned and cut
- 1/2 white onion, diced
- 2 bell peppers, sliced
- smoked sausage (1 large link)
- minced garlic (to taste)
- 1 TB Cajun seasoning
- 1 tsp sugar
- salt and pepper (to taste)
DIRECTIONS
- cook the sliced smoked sausage for 2-3 min to render the fat and brown a little
- add in the sliced cabbage and seasonings (you can add everything here except the sugar and too much salt)
- cook on medium for 30 minutes (top off if you don't want as much liquid at the end)
- stir cabbage and make sure nothing is sticking
- cook for an additional 30 minutes
- serve and enjoy!
