Mundo Perdido
3/4oz (22ml) Lemon Juice
1/4oz (7.5ml) Demerara Syrup
1/4oz (7.5ml) Cinnamon Syrup
1/2oz (15ml) Applejack or Apple Brandy
1 1/2oz (45ml) Black Blended Rum
Formidable Dragon
3/4oz (22ml) Lemon Juice
3/4oz (22ml) Lime Juice
3/4oz (22ml) Molasses Syrup
1/2oz (15ml) Honey Syrup
1/2oz (15ml) Angostura Amaro
1 1/2oz (45ml) Blended Aged Rum
1oz (30ml) Black Blended Rum
1/4oz (7.5ml) Pot Still Lightly Aged Rum
1oz (30ml) Soda Water
Mint Sprig and Lemon Wheel Garnish
Tradewinds
1oz (30ml) Lemon Juice
1 1/2oz (45ml) Coconut Cream
1oz (30ml) Apricot Liqueur
1oz (30ml) Lightly Aged Rum
1oz (30ml) Black Blended Rum
Broken Paper Umbrella and Lime Wedge Garnish
Smuggler's Cove Syrups:
Demerara Syrup:
2 Cups Water
1 Cup Demerara Sugar
3 Cups Granulated Sugar
Bring water to a boil in a small saucepan over high heat. Add demerara Sugar and whisk until sugar is fully dissolved. Add the granulated sugar and whisk again until sugar is dissolved. Remove form heat and allow to cool. Lasts several Weeks.
Cinnamon Syrup:
2 Cups Water
3 Cinnamon Sticks
4 Cups Sugar
Add water to a saucepan with cinnamon sticks and bring to a boil over high heat. Then add sugar and whisk until sugar is fully dissolved. Remove from heat, cover and let stand at least 12 hours. Fine strain cinnamon out and bottle. Lasts several weeks
Molasses Syrup
2 Cups Granulated Sugar
2 Tablespoons Mild Molasses
1 Cup Hot Water
Combine sugar and water and whisky until sugar is fully dissolved. Add in the Molasses and stir to combine. Keep Refrigerated. Lasts Two weeks.
Coconut Cream
1 Can (13 1/2oz) Thai Kitchen Coconut Milk
13 1/2oz Rich Simple Syrup (2:1)
1/4 Tsp. Salt
First stir coconut Milk to make sure fat is combined, then combine Coconut Milk and Rich Syrup and whisk until fully incorporated. Add salt, stir to dissolve. Lasts three weeks, keep refrigerated.
