Recipes for todays video:
Fried Hashbrowns
Shred 1 potato. Squeeze liquid out in cheesecloth. Season with salt and pepper. Heat iron skillet with lard, or your fat of choice. Flatten hashbrowns in skillet and cover with lid. Flip after a few minutes and hashbrowns are golden brown. 1 potato is perfect for one serving.
Eggnog
2 to 3 cups milk
1 cup cream
4 to 6 egg yolks
dash of salt
1/2 tsp nutmeg
1 cinnamon stick
1/2 cup sugar
Heat milk, sugar, and spices till steaming hot. Not boiling. Stir frequently. Whisk egg yolks. Spoon hot milk mixture into yolks slowly, spoonful by spoonful. Then add all the yolks to the hot milk, stirring constantly for 2 minutes. The eggnog will thicken slightly. Then refrigerate.
Gnocchi
1 egg
1/2 mashed potatoes (not 1 cup like I said in the video)
1/2 tsp salt
1 Tbl softened butter
1 1/2 cup flour
1/2 cup ricotta or cottage cheese
Optional : Parmesan or mozzarella
Even though I baked the potatoes in the video, I think it turned out better when I boiled the potatoes. So boil and peel the potato. Either mix the ingredients in a mixer until combined, or mix it all together on the counter. Cut dough into 4 parts and roll into snakes. Cut into small pieces and flour. Boil for 2 minutes, until gnocchi floats to the top.
