These cookies are super soft and chewy topped off with a blueberry cream cheese frosting ♡
Recipe
*Cookies*
1 1/2 cups (300g) sugar
1/4 cup (50g) dark brown sugar
1 cup (227g) melted butter
2 eggs
1/2 tbsp vanilla extract
3 cups (375g) all-purpose flour
2 tsp cornstarch
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
*Cover and chill for 30 mins to 1 hour before baking*
*Bake cookies at 350F (177C) for approximately 15 minutes*
*Blueberry Jam*
*you can use store bought jam but I like to make my own blueberry sauce*
2 cups (300g) frozen or fresh blueberries
Zest and juice of 1 lemon
1 cup sugar (200g) (add less or more depending on your preference)
1 tbsp cornstarch
♡ Cook on medium heat until thickens
♡ Refrigerate for 1-2 hours before using
*Blueberry Cream Cheese Frosting*
1 brick of softened cream cheese (8 oz - 250g)
1/2 cup (113g) soft butter
2 cups (260g) of powdered sugar
1 tsp vanilla extract
2 tbsp of blueberry jam
♡ Whip the cream cheese and butter together until creamy, then add the rest of your ingredients. If you prefer a firmer frosting, then add another cup of powdered sugar.
♡ This recipe makes about 12 large sugar cookies
