My favourite tiramisu cookies ♡
Recipe:
*Cookies:*
2 1/2 cups (300g) all-purpose flour
2 tsp cornstarch
1 tsp baking powder
1/4 tsp baking soda
1 cup (226g) hot melted butter & 1 tbsp instant espresso powder
1 1/2 cups (300g) sugar
1 egg
1 tsp vanilla extract
*Tiramisu Cream:*
8 oz (475g) mascarpone
1 1/4 cups (150g) powdered sugar
2 tsps instant espresso powder
1 tsp vanilla extract
1 cup heavy cream
Some unsweetened cocoa powder
*Bake at 375F (190C) for approximately 10-12 minutes*
*Be sure to let your cookies set and cool completely before adding the tiramisu cream ♡*
*Sometimes the cookies don't spread in the oven, so be sure to lightly press them down with a spoon to flatten them out as soon as they come out of the oven ♡*
