Get the recipe here:https://www.dimitrasdishes.com/sokolatopita-greek-chocolate-cake/ Ingredients For the Syrup: 2 and 1/2 cups water 2 cups granulated sugar 1/2 cup cocoa powder 1/2 teaspoon instant coffee 1 teaspoon vanilla extract For the Cake Dry Ingredients: 8 oz (236ml) milk 3/4 cup vegetable oil 1 and 1/2 cups granulated sugar 4 eggs 1 teaspoon instant coffee powder 2 teaspoons pure vanilla extract 1/2 teaspoon baking soda For the Dry Ingredients: 2 and 1/2 cups (315g) all-purpose flour 1 cup cocoa powder 1 tablespoon baking powder 1/2 teaspoon salt For the Ganache: 1 cup heavy cream 8 oz (1 cup) semi-sweet chocolate chips 1/4 teaspoon vanilla extract Instructions Make the Syrup: In a saucepan, whisk together the water, sugar, cocoa powder, and instant coffee over medium heat. Bring to a gentle boil, stirring occasionally, then reduce heat and simmer for 5 minutes. Remove from heat, stir in the vanilla extract, and set aside to cool completely. 2️⃣ Prepare the Cake: Preheat your oven to 350°F (175°C). Grease a 9x13-inch (23x33cm) baking dish. In a large bowl, whisk together the milk, vegetable oil, sugar, eggs, instant coffee, vanilla extract, and baking soda until well combined. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. 3️⃣ Soak the Cake: While the cake is still warm, poke holes all over with a skewer or fork. Slowly pour the cooled syrup over the cake, letting it absorb completely. 4️⃣ Make the Ganache: Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate chips and let sit for 1-2 minutes. Stir until smooth and glossy. Stir in the vanilla extract and pour the ganache evenly over the cooled cake. 5️⃣ Let It Set & Serve: Allow the ganache to set for at least 30 minutes before slicing.
