Oh boy there's plenty of debate about what goes in a southern seven layer salad. If we really wanted to settle it, we'd find the oldest (ahem...the most well seasoned, experienced and wise) lady in town and ask her because this is one side dish that gets ruled by the generations that have come before me.
It's an old lady dish, okay? There. I said it.
Whether the tomatoes go in Seven Layer Salad, or it should be swapped for cauliflower is up to you.

Leave out the salt if you want to make it a day ahead. Otherwise, make it a couple of hours in advance of serving.
Ingredients:
- 3/4 head iceberg lettuce outer leaves and core removed
- 1 cup frozen peas thawed
- 4 hard boiled eggs chopped
- 3/4 cup chopped green onions
- 2 medium tomatoes diced bite size pieces
- 6 slices bacon cooked crisp and crumbled
- 1 cup shredded cheddar cheese
- 1 cup mayonnaise like Duke’s or Hellmann’s
- 1 cup sour cream
- 2 tablespoons granulated sugar
- salt and pepper for sprinkling
