Spearfishing Moray Eel or Green Moray Eeel exactly the type of undesirable i was keen to test out. Prolific around Sydney and NSW you will commonly find these guys in rocky weedy reef. They love hiding in holes sticking their not so attractive heads out I spearfishing in Sydney and the surrounding areas of Australia. The whole purpose of the Undesirables Series is to try and tempt people into eating different fish and break away from the traditional attitude that there's only 5-6 good eating fish in Australia. If we all ate a more varied selection of fish from the ocean there wouldn't be massive pressures on particular stocks. So eating a greater variety of fish will make our spearfishing more sustainable. I cook this fish up as kentucky fried eel, coming to a drive thru near you. An important warning some eels including moray eels contain large amounts of toxins in both their mouths, blood and the mucas on their skin. Digestion of this toxin could make you very crook and even kill you. When the toxin goes above 72 degrees it will make it safe to consume. Bleeding the flesh is incredibly important.
