RECIPE

Egg 2 (~110g)
Egg yolk 1 (~20g)
Honey 5g
Sugar 65g
Cake flour 70g
Unsalted butter 18g
Milk 25ml


▼Instructions

1. Sift the flour and heat the butter, milk in water bath to 60°C
2. Eggs, egg yolks, honey, sugar, heat in water bath to 40°C
3. After beating, sift in the flour and stir for about 30 times
4. Add a small portion of the butter to the batter and then pour it in, stirring for about 30 times
5. 150°C 30-35 minutes
