Winter Simmer Pot
1 orange (sliced)
2-3 cinnamon sticks
3-4 whole cloves
1-2 star anise (optional, for extra fragrance)
1 small sprig of fresh rosemary or a handful of pine needles (optional)
4 cups of water
A small pot
Leek & Potato Soup -
Ingredients:
• 2 tbsp butter or olive oil
• 2 large leeks, white and light green parts sliced
• 3 medium potatoes, peeled and cubed
• 4 cups chicken or vegetable broth
• 1 cup heavy cream (or milk for a lighter version)
• Salt, pepper, and a pinch of nutmeg
• Chopped chives or parsley for garnish
Instructions:
1. Heat butter or oil in a pot over medium heat. Add leeks and sauté until soft and fragrant (about 5 minutes).
2. Add potatoes, broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
3. Blend the soup until smooth (using an immersion or countertop blender). Stir in cream and season with more salt, pepper, and nutmeg.
