鯪魚肉蒸豆腐
材料：
鯪魚肉半斤
布包豆腐3件
蝦乾10隻
綠豆粉絲4兩
辣椒仔1隻
芫荽1棵
處理：
1. 蝦乾，清水浸軟。
2. 粉絲，清水浸軟。
3. 蝦乾，清水沖洗乾淨，一半切碎。
4. 魚肉，放碗內，加入已切碎的蝦乾。
5. 芫荽，切去根部，清水洗乾淨，切碎。
6. 辣椒仔，切去椗，打直1開2，去籽，切碎。
7. 魚肉調味：
a. 生粉1湯匙
b. 油1茶匙
c. 胡椒粉適量
d. 糖半茶匙
e. 生抽半茶匙
f. 蠔油半茶匙
順一個方向攪至起膠。
8. 豆腐，打橫1開2，再1開2，放碟上，中心刮去少許豆腐，放魚肉內。
9. 再攪勻魚肉。
10. 加入少許生粉在豆腐上，魚肉鋪上面，蝦乾放在魚肉上。
烹調：
1. 大火煲滾1鑊水。
2. 大火蒸豆腐15分鐘。
3. 完成，灑上芫荽及辣椒碎。
4. 可享用。

Ingredients:
Grass carp meat 0.5 catty
Hard beancurd 3 Nos.
Dried sea prawns 10 Nos.
Mung bean vermicelli 4 taels
Chili 1 No.
Coriander 1 No.
Preparation:
1. Dried sea prawns, soak in tap water until they turn soft.
2. Mung bean vermicelli, soak in tap water until it turns soft.
3. Dried sea prawns, rinse with tap water. Half is to be chopped well.
4. Fish meat, put in a bowl. Add in the chopped sea prawns.
5. Coriander, cut its root. Rinse with tap water. Chop well.
6. Chili, cut the anchor. Divide it into 2 shares vertically. Remove seeds. Chop well.
7. Season the fish:
a. Tapioca starch 1 tbsp
b. Oil 1 tsp
c. Pepper appropriate amount
d. Sugar 0.5 tsp
e. Light soya sauce 0.5 tsp
f. Oyster sauce 0.5 tsp
Stir in one direction until it turns sticky.
8. Tofu, divide it into 2 shares horizontally. Divide it into 2 shares again. Put on plate. Scoop little tofu at the centre of each. Put it in the fish.
9. Mix the fish meat well.
10. Add in little tapioca starch on top of tofu. Put fish meat on top. Sea prawns are to be put on top of fish meat.
Steps:
1. Heat up a wok of water at high flame.
2. Steam the tofu at high flame for 15 minutes.
3. Complete. Put coriander and chili cubes on top.
4. Serve.
