最近は牛筋煮込みにも入っているところを見かけるアキレス腱ですが、中国では蹄筋と呼ばれ、古くから薬膳の食材として親しまれてきました。
中でも、鹿のアキレス腱は稀少で高級素材として扱われています。
アキレス腱の名前の由来は、ギリシャ神話の英雄「アキレウス（Achilleus）」から来ているようですが、アキレス腱自体には味はなく、上質なゼラチン質がスープに溶け、ふかひれと同じ様にコラーゲンたっぷりな滑らかな食感と、口にまとわり付くような感覚を楽しむ術は、僕ら平たい顔族の方がほんの少しだけ上手な気もします。
