Black Bean & Cornmeal Power Waffle – One Waffle to Rule the Day
Waffle Ingredients (Serves 2)
•1/2 cup cooked or canned black beans (drained & rinsed)
•½ cp canned corn
•1 cup fine cornmeal
•1 cup oat flower
• 1/3 cup all-purpose flour
• 2 tbsp black chia seeds
• 1 tbsp flaxseed meal
• 2 tbsp hemp hearts
• 1 tbsp nutritional yeast
• 1 tsp cumin
• ½ tsp smoked paprika
• ¼ tsp garlic powder
• ½ tsp salt
• 1 tsp baking powder
• 2 large egg (or egg replacer equivalent)
• 1 tbsp avocado or vegetable oil
• 1 1/2 cup unsweetened almond milk (adjust for batter consistency)
Topping:
• Yogurt-Cilantro Drizzle – 3/4 cup plain coconut or Greek yogurt + 1 tbsp apple cider vinegar or lemon juice + 2 tbsp chopped cilantro + salt & pepper to taste

Look, I’m not a nutritionist. Everything I do here is just me figuring stuff out, with the help of Google, a ridiculous amount of hospital handouts, and a whole year of feeding tubes after losing my esophagus (plus some other bits) to cancer. And just in case you were wondering—I also drink a daily fresh juice (three simple ingredients), a high-protein shake, and take vitamins to support my overall health. But don’t quote me on shit—always check with your doctor for what’s right for your body. This is just my way of living.

I make a completely new waffle every night, always packed with whole grains, plant-based protein, fiber, and essential nutrients. Some are high-protein waffles for muscle recovery, some focus on gut health and digestion, and every once in a while, I throw in a comfort food waffle or a dessert-inspired recipe—because balance matters.
A different Power Waffle recipe every day means my body gets everything it needs—without eating the same boring thing over and over. I’m fueling my body with whole foods while keeping my gut happy, my energy steady, and my muscles strong.
