5 tbsp oyster sauce
2 ½ tsp salt
2 ½ tsp powdered chicken stock
3 tbsp granulated sugar
50 ml tamarind water solution
250 ml cooking oil

BALADO SEASONING
80 gr shallots
40 gr garlic
200 gr large red chilies
100 gr curly chilies
3 bay leaves
1 ½ tsp salt
2 tsp powdered chicken stock
1 tsp pepper powder
3 tbsp granulated sugar
200 ml cooking oil

GREEN SAMBAL
4 cloves garlic
10 cloves shallots
4 small green tomatoes
5 large green chilies
15 green curly chilies
50 gr green cayenne pepper
200 ml oil
1 ½ tsp salt
½ tsp chicken stock powder
¼ tsp micin
1 tsp granulated sugar

SAMBAL BABY SQUID & ANCHOR
100 gr anchovies
250 gr baby squid
100 gr shallots
25 gr garlic
150 gr large red chilies
100 gr red curly chilies
50 gr red cayenne pepper
250 ml oil
