Stovetop Mac And Cheese Recipe With Velveeta & Cheddar is our favorite easy mac and cheese recipe. It's a super creamy mac and cheese thanks to the homemade cheddar sauce and the velveeta. And it’s super cheesy and has that classic mac n cheese flavor thanks to the cheddar and velveeta sauce and it’s ready in about 15 minutes, almost as fast as making it from a box!
As a one pot mac and cheese recipe, it's ready in about 15 minutes! Boil the macaroni pasta first (5 - 8 minutes) then strain the macaroni and hold it in the colander while making the creamy cheese sauce (about 8 minutes). Then just mix the macaroni and cheese and dig in! And to make this stovetop Mac and Cheese recipe even faster, use two pots - one to make the pasta, one to make the cheese sauce, and this easy mac and cheese recipe is ready less than 10 minutes.
Ingredients For Stovetop Mac and Cheese Recipe With Velveeta and Cheddar Cheese
7 - 8 oz elbow macaroni or your favorite pasta
2 tablespoons of butter
2 tablespoons of flour
1 cup sharp cheddar, grated (or mild/medium cheddar, gouda, or your favorite cheese)
about 4 oz or 1/2 cup of Velveeta cubed, I'm using Velveeta Blanco
salt & pepper to taste
2 cups of milk
Directions For How To Make Stovetop Mac And Cheese Recipe
First, cook the pasta according to the package directions, I usually use less water than what the package says, about enough to cover the pasta by an inch or two. Bring the water to a boil, if you’re pressed for time, remember to salt your water after it boils, because it’ll take longer to boil salted water. I’m using about a tablespoon of kosher salt. Add the pasta and give it a stir so the pasta doesn’t stick together or to the pan. Cook according to your package, we like a soft macaroni for mac and cheese so I’m cooking it for about 8 minutes, stirring the pasta every few minutes and testing it for doneness.
While the pasta is cooking, grate 1 cup of cheese. I’m using a sharp cheddar because it’s got great flavor. You could also use medium cheddar, gouda or smoked gouda.
When the pasta is done, drain the water off and don’t rinse the pasta. I’m going to hold the pasta in the colander while making the cheese sauce in the same pot. Add 2 tablespoons of butter, and let it melt.
Then whisk in the 2 tablespoons of flour, and cook this mixture over medium high heat for about 2 minutes until it turns golden, whisking constantly. When the color of the roux changes to a golden color, slowly add in the 2 cups of milk. Bring the milk mixture to a boil, and continue cooking for about 3 - 5 minutes until it has thickened.
Next add in the shredded cheese gradually, stirring the mixture so the cheese melts in smoothly. Add in the Velveeta cheese, this is the Velveeta Blanco. You can also use regular Velveeta, the Velveeta Blanco has a slightly milder taste. Continue stirring it into the mixture until it’s all melted.
I’ve added about ¼ tsp of ground black pepper for seasoning, you could also add your favorite your favorite hot sauce here to taste. Next add in the cooked macaroni pasta, and stir. And that’s it!
