Custard:
3 egg yolks
1 Cup sugar
2 Cups milk
2 Tablespoons AP Flour
Half Stick (4 tablespoons) Butter
1 Tablespoon Vanilla Extract
Cheesecake Filling:
2 8oz packages of cream cheese (room temperature)
1 Cup Powder Sugar
1 Tablespoon Vanilla Extract
1/2 Cup Whipping Cream
Strawberry Glaze:
Whole Frozen or Fresh Strawberries (stem cut off)
3/4 Cup water
2 Tablespoons Sugar
Cornstarch Slurry = 1 Tablespoon water + 1 Tablespoon Cornstarch
Crust & Miscellaneous:
1 and Half Packs Graham Crackers
1 Stick and a Half Butter (Melted)
Fresh Bananas
Fresh Strawberries
Chessmen Cookies
Instructions:
1) Pulse the graham crackers in a food processor until they become a crumb and add in the melted butter and pulse again until fully incorporated.
2) Spray your pan with nonstick spray and spread out the graham crackers and bake for 8-10 minutes until golden brown in a preheated 350 degree oven and let cool off.
3) Add all ingredients for the custard except the flavorings into a medium pot or saucepan on medium high heat and continuously stir for 15 minutes until thick.
4) Once cooked and thick take the pot off the heat strain the custard through the strainer and add in the flavorings. Let cool off.
5) In a medium pot or sauce pan on medium high heat add all the ingredients for the strawberry glaze and cook until the strawberries somewhat breakdown.
6) Add in the cornstarch slurry and stir together until thick. Remove from heat and add to a processor or blender to blend and pass through a strainer. Let cool off.
7) In a mixing bowl add together the cream cheese, powder sugar, and vanilla extract and beat together until smooth. Add in some of the custard if you want to.
8) Fold in the whipped cream into the custard.
9) Slice fresh bananas and strawberries.
10) To assemble the banana pudding, spread some of the cheesecake filling as the bottom layer on the graham cracker crust, then add the chessmen cookies which act as a bedding, then add the sliced bananas and strawberries, then drizzle the custard and glaze. Repeat these steps until fully assembled. You should have 2-3 layers.
11) Spread whipped cream on top and layer more chessmen cookies with fresh strawberries and drizzle more of the custard.
