Stuffed butternut squash is one of my favorite dinner ideas for enjoying the best fall flavors. Tender, roasted butternut squash halves are filled to the brim with a hearty and flavorful mix of sweet Italian sausage, crisp apples, dried cranberries, pecans, and a medley of veggies and herbs.
I love seasonal butternut squash recipes like my butternut squash soup, but when I’m in the mood for something a bit heartier, this apple sausage stuffed butternut squash is my go-to. And it's perfect for both Thanksgiving and Friendsgiving dinner!

01:15 Scoop out the seeds, season it, then roast it.
01:58 Chop the onion, apple, sage, and rosemary for the filling.
03:21 Cook the Italian sausage until browned.
03:30 Cook the rest of the filling ingredients with the sausage.
04:23 Scoop out some of the flesh from the butternut squash halves.
05:02 Add the filling to the butternut squash and broil for a couple of minutes.
