📋 INGREDIENTS:
For the sweet potatoes:
• 2 large sweet potatoes
• 1 tbsp olive oil
• ½ tsp salt
• ½ tsp smoked paprika
For the cashew herb cream:
• 100 g cashews (¾ cup) (soaked in hot water for 2 hours)
• 1 tbsp lemon juice
• 1 tsp nutritional yeast
• 1 garlic clove
• ½ tsp salt
• 50 ml water (3 ½ tbsp) (depending on desired consistency)
• 1 handful of fresh herbs (parsley, coriander or dill)
For the crispy chickpeas:
• 200 g chickpeas (1 ¼ cups, cooked)
• 1 tsp olive oil
• ½ tsp cumin
• ½ tsp paprika
• ¼ tsp salt
To serve:
• Fresh herbs (e.g. coriander or parsley)
• 1 tsp sesame or black cumin
