Fun Trivia with Son: Now I just need a large 12 inch Egg Roll Wrapper!

~~Black Beans & Rice Recipe~~
1 tsp. olive oil
1 onion, diced
2 cloves, garlic, minced
¾ cup uncooked rice (We used white jasmine rice)
1½ cup chicken broth
3½ cup canned black beans, drained
1 tsp ground cumin
½ tsp cayenne pepper
**Note after eating this, we realized that recommend also adding a teaspoon or 2 of salt
~~Instructions~~
1. Heat oil in sauce pan over medium heat. Add onion and garlic, cook for 4 minutes, stir in and coat the rice for 2 minutes.
2. Add broth and bring to a boil. Cover, reduce heat to a simmer, and cook until liquid is absorbed, about 20 minutes.
3. Stir in beans, cumin, pepper, and cook til beans are warmed through. Serve and enjoy. Can garnish with greens, lemon, or lime!
