海鹽焦糖脆脆 材料
水:100克
白糖:200克
麥芽糖:50克
海鹽:3克
小蘇打粉:10克
製作時間 (不包括焦糖放涼時間) 10分鐘
Sea Salt Honeycomb Toffee Ingredients
Water : 100g
Sugar : 200g
Maltose : 50g
Sea Salt : 3g
Baking Soda: 10g
Processing time (not including toffee cooling time) 10 minutes
製作小撇步:
1) 煮糖漿前必須預先準備好全部材料及盛器
2) 勺子用食油薄抺才舀麥芽糖比較容易處理
3) 白糖還沒完全溶化前不要攪拌糖漿以免反砂
4) 煮好的糖漿非常高溫最好使用木質湯匙攪拌
5) 糖漿必須煮至水份完全蒸發焦糖才會酥脆不黏
6) 加入海鹽令焦糖脆脆口味更有層次, 不喜歡鹹甜味的可以省略, 不影響製作
Cooking Tips:
1) Have all the ingredients and parchment-lined pan ready on the side before boiling syrup
2) Use an oiled spoon to scoop maltose to avoid it from sticking to the spoon
3) Do not stir the syrup until the sugar is completely dissolved
4) Better use a wooden spoon to stir the syrup as it is extremely hot
5) When syrup temperature reaches 320°F/160°C, all water in it will be evaporated which make the honeycomb be more crumbly and not sticky
6) Adding sea salt into the syrup to enrich the honeycomb's flavors, may simply omit it if do not
like the salty-sweet taste
