Shopping List:
1 lb boneless skinless chicken thighs
brioche hamburger buns
oil for deep frying
*Buttermilk Marinade*
2 cups buttermilk
2 tbsps sriracha
2 tsps chicken bouillon powder
1/2 tsp adobo (any of your favorite all purpose seasonings)
1 tbsp poultry seasoning
Flour/Breading:
2 cups all purpose flour
1/4 cup corn starch
1 tbsp chicken bouillon powder
2 tsps All-Purpose Seasoning
1 tsp Peruvian Seasoning *mccormicks* or cajun seasoning
Asian Slaw:
1 tbsp sesame oil
3 tbsps olive oil
1 tbsp ginger paste
2 cloves minced garlic
3 tbsps honey
2 tbsps low sodium soy sauce
1/4 cup rice vinegar
2 cups broccoli slaw (any slaw would work)
1/2 cup grated or diced radishes
1/2 cup grated carrots
1/4 cup diced cilantro
salt and pepper
Sweet Chili Sauce:
1 tbsp butter
1 cup Sweet Chili Sauce
2 tbsps low sodium soy sauce
1 tbsp hoison sauce
1 tsp sesame oil
I recommend double dredging the chicken. (From the buttermilk into the flour - back into the buttermilk - then back into the flour). Allow your chicken to sit - fully breaded for about 10-15 mins before frying. Internal temp should be between 165-175. Fry at 350 degrees F.
