This sweet potato cake was made for a request.
I like sweet potato cakes, but all sweet potato cakes look the same.
It was a friendly and cozy decoration, but it seems boring.
So, I tried to decorate it differently.
After layering the sweet potato mousse with custard cream and the creme diplomate.
The outer part is wrapped with a purple soft biscuit and decorated with white chocolate flowers.
The cake is so delicious! ^^

Biscuit is made by the chiffon method. So it's soft.
Don’t bake it at high temperature, so it will come out pretty without any brown color.
If using the convection oven, it's better to bake at 150℃ for 10 to 12 minutes.

Put Sweet potatoes in a steamer and steamed for 25 ~30 minutes.
And after cooling, I squeezed it when still lukewarm.
You can also wrap it in foil and bake in the oven.
I think the boiled sweet potato is too wet.


Ingredients

♥ ︎Genoise (15cm)
63g cake flour
63g sugar
2 eggs
27g milk
14g butter
5g corn syrup
3g vanilla Extract

♥ ︎Custard Cream(pastry cream)
3 egg Yolk
65g sugar
25g plain flour
10g butter
280g milk
1/2 tsp vanilla bean paste or 2/3 vanilla bean.

♥ Sweet potato mousse
320g Steamed Sweet Potato
180g Custard Cream
70g heavy cream
12g sugar

♥ ︎Creme diplomate
100g custard cream
140g heavy cream
11g sugar
4g powder gelatin + 20g cold water (or 4g leaf gelatin soaked in cold water)

♥ ︎Biscuit
2 egg yolks
10g sugar
20g milk
20g vegetable oil
40g cake flour
2 egg whites
40g sugar
Purple and blue food coloring.

Bake at 160℃ for 10minutes.
