Recipe: 104 g almond flour 96 g powdered sugar 80 g egg whites 80 g caster (superfine) sugar Pinch cream of tartar (meringue stabilizer, optional, goes in with the caster sugar) Pinch egg white powder (meringue stabilizer, optional, goes in with the caster sugar) Pinch salt (optional, enhances flavour and cuts sweet, goes in with the dry ingredients) To scale this recipe for any amount of egg white, my recipe is based on the following ratios: Egg white in grams: any weight Almond flour = egg white weight x 1.3 (1:1.3) Powdered sugar = egg white weight x 1.2 (1:1.2) Caster sugar = egg white weight x 1 (1:1) Bake time is 20 minutes at 285 in my Ninja Foodi 10-in-1 oven. Your bake time and temp may vary.
