脆皮蛋饼 (谢谢LamaShania分享传统做法的食谱)
面团材料:
中筋面粉 220g
热水 110g
冷水 20g-30g
盐 2g
油酥材料:
低筋面粉 50g
油 30g
内陷可以根据自己喜欢的材料做变化,我是放鸡蛋加葱花,肉松,美乃滋和芝士
1. 将面粉和盐放入主锅,设定1分钟/速度3 混合,同时在洞口加入热水。
2. 加入冷水,开启揉面模式/2分钟
3. 取出面团,盖上保鲜膜,休面30分钟或1个小时
4. 现在做油酥的部分,将底筋面粉和油倒入主锅,设定6分钟/Varoma/速度2 放凉备用
5. 在揉面垫上撒些粉,取出面团整成圆形,用擀面棍擀成大的长方形 (可以参考我的影片)
6. 在擀好的面皮涂上均匀的在每个部分涂上油酥。
7. 将面皮卷起来,尽量卷的紧一些,层次会更多。
8. 将接口的面团收口捏紧,分割成6段,用扭断的方式扭开(可以参考我的视频)
9. 将面团整成圆形,用手掌压扁,用擀面棍擀开成圆形,放置一旁备用。(可以在底部和表面铺上保鲜膜防沾,吃不完的可以收冰箱冷冻,要吃的时候拿出来煎就可以了。
10. 加适量的油热锅,将油划锅锅的每个部分,放入饼皮,煎至表面开始有气泡后,反面。煎至两面上色后取出备用。
11. 加油热锅,打上一粒鸡蛋(可以加葱花提香哦),盖上刚刚煎好的饼皮,煎至鸡蛋那面上色,翻面。
12. 鸡蛋那面朝上,加入准备好的馅料,卷起即可
13. 切成自己喜欢的大小,趁热享用哦
Taiwanese Crispy Dan Bing (Thank you Lama Shania for sharing the traditional recipe)
Dough Ingredients:
All-purpose flour 220g
Hot water 110g
Cold water 20g-30g
Salt 2g
Pastry Ingredients:
low-protein flour 50g
Oil 30g
The inset can be changed according to the Ingredients you like, I put eggs with chopped green onion, pork floss, mayonnaise and cheese
1. Put flour and salt in mixing bowl, set 1 minute/speed 3 to mix, and add hot water to the hole.
2. Add cold water and turn on the kneading mode for 2 minutes
3. Take out the dough, cover with plastic wrap, let it rest for 30 minutes or 1 hour
4. Now for the shortbread part, pour the bottom flour and oil into the mixing bowl, set 6 minutes/Varoma/speed 2 and let cool for later use
5. Sprinkle some powder on the kneading mat, take out the dough and shape it into a circle, and use a rolling pin to roll it into a large rectangle (refer to my video)
6. Spread the rolled dough evenly and spread the shortbread on each part.
7. Roll up the dough and make it as tight as possible for more layers.
8. Tighten the dough of the interface, divide it into 6 segments, and twist them apart (refer to my video)
9. Shape the dough into a circle, flatten it with the palm of your hand, roll it out with a rolling pin, and set it aside for later use. (You can put plastic wrap on the bottom and surface to prevent staining. If you can't finish it, you can put it in the refrigerator and fry it when you want to eat it.
10. Add an appropriate amount of oil to heat the pan, cut each part of the pan with oil, put it into the cake crust, and fry until there are bubbles on the surface, and then the reverse side. Fry until both sides are colored and take it out for later use.
11. Add oil to the hot pan, top with an egg (you can add chopped green onion for fragrant), cover with the crust that has just been fried, and fry until the egg is colored, turn it over.
12. With the egg side facing up, add the prepared fillings and roll it up
13. Cut into the size you like and enjoy while it's hot
