►Ingredients for the Tandoori Chicken
►Chicken Prep
5 - 6 large chicken legs (around 1.7kg or 3.7lbs)
2 tsp salt
Juice of lemon
1/4 cup white vinegar
►Chicken Marinade
1 cup natural yogurt
2 tbsp garlic paste
1.5 tbsp ginger paste
1.5 tsp black salt
1.5 tsp garam masala
2 tsp coriander
2 tsp red chili
2 tbsp kashmiri chili
2 tsp mango powder
1 tsp lemon grass powder
1 tsp cumin
1/2 tsp black pepper
2 tsp fenugreek powder
1 tsp salt
7 tbsp oil
►For the Rice
2 tsp garlic paste
2 tsp red chili paste
1 red chili
1 brown onion
2 bay leaves
1 inch cassia bark
2 tsp cumin seed
black lime
1 tsp cardamom powder
1 tsp salt
1 tsp chili flakes
1 tsp red chili
1/2 tsp white pepper
2 tsp coriander powder
1/2 tsp garam masala
2 tsp biryani masala
3 cups brown chicken stock
2 cups basmati rice (wash few times)
5 tbsp oil
►For the Sauce
1 tbsp pomegranate seeds
3 green chilies
15g mint leaves
25g coriander
1 tbsp lemon juice (use more if needed)
1 tsp cumin powder
1 tsp sugar
1 tsp salt
1/2 cup water
2 - 3 tbsp yogurt
