Last week's snow is thawing, the days are warming up a bit, and it's sugaring season. My family is going to tap maple trees for syrup today. We've got our fingers crossed for our first-ever sap harvest. Hopefully we'll be processing maple syrup in a few weeks. We'll also make some cozy coffee-flavored granola--a recipe I've been tweaking and experimenting with lately.
Coffee-Flavored Granola:
4 C. rolled oats
1 1/2 C. almonds
1/2 C. chia seeds
1/2 tsp. salt1/2 C. coconut oil
1/2 C. honey
1 tsp. vanilla extract
1 Tbs. coffee extract
Combine oats, almonds, chia seeds, and salt in a bowl. In a sauce, over low heat, combine coconut oil, honey, vanilla extract, and coffee extract. Pour wet mixture over dry ingredients and stir thoroughly so all of the dry ingredients are coated in the wet mixture. Spread evenly on a baking tray. Bake at 350F (175C) for 20 min., stirring half-way.
