With a beautiful explosion of textures in every bite. The base is a spicy, runny curry (called rassa or tarri), made from sprouted moth beans—it's thin yet packed with flavor. On top of that, you get a generous layer of crunchy farsan or sev, which adds a crispy contrast to the curry’s warmth.
As you dig in, the softness of the pav (bread roll) soaks up the fiery gravy, creating a melt-in-the-mouth experience. The beans themselves are tender but slightly chewy, offering a nice bite amidst the spicy broth.
Topped with raw onions, fresh coriander, and a squeeze of lime, the final mouthful is a burst of soft, crunchy, juicy, and spicy all at once. It’s messy, intense, and completely addictive.
