Authentic Kerala Dishes With My Personal Touch 😍
Ingredients
Chicken -400gm
Grated coconut -3tbsp
Fennel seeds -1/4tsp
Cashew nuts -15
Water -
Coconut Oil -2tbsp
Cardamom -2
Cloves -3
Cinnamon -1 small
Ginger -1tsp
Garlic -1tbsp
Green Chilli -3
Curry leaves -
Salt -3/4 to 1 tsp
Onion -1 big
Tomato - 1 small
Turmeric Powder -1/4tsp
Chilli powder -1tsp
Coriander Powder -112/tsp
Garam masala -1/4 to 1tsp
Hot Water - 2 to 2 1/2 cups
Sugar -1 pinch
Curry leaves
Coriander leaves -
Coconut Oil -
Green Chilli -1
Method
Add 3 tbsp of grated coconut to the grinder jar. Add some cashewnut, ¼ tsp fennel seeds. Grind this well. Keep this aside.
Add coconut oil in a saucepan. Add spices 1 cinammon, 3 cloves and 2 cardamom and bay leaf too. Saute this. Add curry leaves, green chilly , small piece of ginger, 3-4garlic. Saute. Add onion. Add salt. Saute well. When the onion is brown reduce the heat add the powders. Add turmeric, chilly powder, coriander powder . saute well. Add tomatoes. Saute well till the tomatoes are cooked well. Add little water for it to be cooked. Add the chicken pieces. Mix well with the masala. Cook it for 5 mins. Add hot water and let the chicken cook well on medium flame. When the water boils well. Add the ground mixture. Mix well. Check the salt. Adjust accordingly. Cook for 5 mins. Add sugar (optional). Add a pinch of garam masala powder. To make it lose you can add hot water. Garnish with coriander leaves and coconut oil. Turn of heat.
