Everyone has a favorite Thanksgiving side…and mine is definitely stuffing. Yes there are a million recipes out there for stuffing and I’m sure also a million preferences to how it is prepared, but this is the one that I grew up on and has all of, what I consider to be, the core Thanksgiving flavors. Yes we are using Stove Top, skipping the fanciful experience of buying bread and drying said bread to a staleness only suitable for stuffing. But this is something approachable, easy, delicious and simplifies one of the many sides you may be scrambling around the kitchen to make on the day of. Or, it’s very possible you are already making your fancy stuffing for your main Thanksgiving event and are interested in a perhaps not so laborious stuffing recipe for your second Thanksgiving event/potluck…so here you go! Ingredients (4-6 servings) - 1 box of Stovetop Stuffing (I used the turkey one, but feel free to use your favorite) - 1 yellow onion, diced - 4 cloves of garlic, minced - 4 stalks of celery, diced - 1/2 lb of Italian sausage - 1 1/2 - 2 cups chicken or turkey stock - 1/2 cup butter (1 stick) and 1 tbsp butter for greasing the pan - salt and pepper Recipe (4-6 servings) 1. Chop vegetables 2. Butter a medium size casserole pan and preheat oven to 400°F 3. Cook sausage in a medium heat pan, breaking into pieces with your spoon until cooked through and browned 4. Add chopped onions, celery, garlic and butter to the pan and cook all together until onions are translucent and celery is slightly tender, season with salt and pepper lightly, taking into account that the stock and the stuffing mix will also be seasoned 5. Turn off heat and add the stuffing mix and stir to combine 6. Add the stuffing to the buttered pan and pour over the stock 7. Bake at 400°F for 30 minutes, the top should be crispy and the inside should be moist 8. Enjoy!
