Prepare the Chicken: • Make light checkerboard cuts on the surface of each chicken breast (this helps with seasoning and even cooking). • Season both sides with salt and pepper. 2. Coat with Flour: • Spread ½ cup flour on a plate. • Lightly dredge each chicken breast in the flour, coating both sides evenly. 3. Sear the Chicken: • Heat 2 tablespoons of olive oil in a large frying pan over medium heat. • Add 2 tablespoons of butter and let it melt. • Place the chicken breasts in the pan and cook for 4–5 minutes on medium-high heat on each side, until golden brown and caramelized. • Remove chicken from the pan and set aside on a plate. 4. Make the Sauce: • In the same pan, add the finely chopped garlic and sauté for 1 minute until fragrant. • Pour in 1 cup chicken stock and bring to a gentle simmer. • Stir in 1 cup heavy cream. • Add ½ cup grated Parmesan cheese and stir until melted and smooth. 5. Season the Sauce: • Add ½ teaspoon thyme and ¼ teaspoon red pepper flakes. • Season with additional salt and black pepper to taste. 6. Add Sun-Dried Tomatoes: • Stir in ⅓ cup chopped sun-dried tomatoes. 7. Simmer the Chicken in the Sauce: • Return the chicken breasts to the pan. • Reduce heat to low and simmer for another 5 minutes, allowing the chicken to soak up the flavors. 8. Finish with Basil: • Sprinkle the chopped fresh basil over the chicken and sauce. 9. Serve: • Serve hot with mashed potatoes, pasta, or rice.
