Did you know that black olives are set up so easily?
Setting up black olives in full measure:

Materials :

* Approximately 3 kilos of black olives for a 5 liter drum
* 1 cup of grape vinegar
* 1 water glass measure of oil
* Two fingers missing from 1 glass of brine salt (=no iodized salt= )

Fabrication:

* Wash your black olives well and fill them in a 5 liter jerrycan. Pour the salt, oil and vinegar on it and close the mouth tightly. Shake well so that the mixture reaches all the olives. Store in a cool place out of direct sunlight. Shake daily for the first week. Shake once a week for the following weeks, then once every two weeks. You will see that your olives are getting watery and shriveled. In this way, your olive will stay for four or five months. After four or five months, it will be ready to sweeten. So after doing some processing, it will be ready to eat.

THE SWEETING PROCESS IS AS FOLLOWS:
We filter the water that our olives are in and leave them in warm water for two hours and in cold water for two hours. The purpose of this is to let the salt go. Then we pour it into a sieve and let the water drain completely. Do not forget to stir once or twice a day. Drying time varies between 3 days and seven days. According to climate and season. Your olives will turn black and shrivel. When it takes the appearance of black olives, you can lubricate it with oil and add it to the jars. Two fingers missing from a glass of water is enough oil for a can of olives. Store the oiled olives in the refrigerator. NOTE: You don't need to sweeten all the olives you set at once. Sweeten one jar and open the other one to sweeten when you consume it. Your olives will last even two years in their dried form (unflavored). I always have black olives, which I consume this year, in the new year. Since the newly established olives cannot be consumed for four or five months, there is a need for olives left over from the previous year. Keep this in mind too😉
