INGREDIENTS:
For the streusel topping:
2/3 cup sugar
1/2 cup flour
1 1/2 tsp cinnamon
½ tsp cardamom
5 tbsp cold unsalted butter, cubed
For the cake:
2 cups flour
2 tsp baking powder
1/2 tsp salt
8 tbsp (1 stick) unsalted butter, room temp
3/4 cup sugar
1 egg
3/4 cup milk
2 tsp vanilla
DIRECTIONS:
Streusel topping: combine sugar, flour, cinnamon, cardamom and cut/mix cold butter in until mixture resembles wet sand with some small chunks of butter remaining.
Cake: cream together butter and sugar, add egg, milk, and vanilla and incorporate. Add flour, baking powder, and salt and mix until just combined (don't over-mix!). Spread batter into a greased 9x9 baking dish and bake at 350 F for 30-35 mins.
