The salmon recipe is so easy, it just takes time.
1 qt water
Slightly less than 1/3 cup kosher salt or 2 oz fine salt
1 cup or just a bit more of brown sugar
-After prepping Salmon, soak meat in brine for ~18 hours (For more salty fish let soak longer)
-Remove and pat dry
-Let sit under fan in a cool room for 3-4 hours until sticky layer forms on salmon surface
-Add any extra seasoning if you wish (Pepper/spices)
-Smoke at 180ºF for ~2 hours while basting with honey, maple syrup, jam or something else sweet every 20-30 minutes
