Spice Dough
100g Melted unsalted butter
2 Eggs
200g refined sugar
120ml milk
150g honey
3g ground cinnamon
3g ground cloves
3g Teaspoon of ground ginger
QB Grated nutmeg
300g White Rose Wheat Flour
8g Teaspoon of baking soda
8g Teaspoon of baking powder
Coconut Cream
300ml Whole Milk
200ml Coconut Milk
395g Condensed Milk
4 Egg Yolks
200g UHT Cream
60g Butter
60g White Rose Wheat Flour
100g Whipped Chantilly
Peach Jam
500g Peach
250g Refined Sugar
½ Juice of half a Tahiti lemon
3g Pectin
Sugar Syrup
250ML Water
125g Sugar refined
1. Mix the ingredients in a saucepan and cook over medium-high heat for 3 minutes after boiling.
2. Let cool and set aside for assembly
