#coconutflour #nutfree This Keto Buttermilk Biscuit was a labor of love. I probably did over 10 variations, trying to get the best texture without certain ingredients. I didn't want to use almond flour, mozzarella or vital wheat gluten because my stomach doesn't do well with a large amount of these ingredients. With the combo of leavening, xanthan gum, protein powder, cream cheese and buttermilk, it yielded a soft and fluffy biscuit perfect for so many applications! Strawberry Shortcake is a simple dessert to make with these biscuits just sprinkle your favorite alternative sweetener over sliced strawberry. Can add lemon juice or vanilla extract and let sit for a few hours for the strawberries to release their natural juices. Make some keto whipped cream, by just whipping up heavy cream with your favorite sweetener. I just use liquid stevia which is the easiest to add a few drops at a time until it is sweet enough. Strawberry Jam is another easy recipe to use on these buttermilk biscuits. There are many variations I've seen on YouTube. And I've made quite a few variations myself. In this video, I used allulose to make a jam just like I would at work. Sliced strawberries, allulose and some lemon juice and just cook until a jam consistency develops and chill until needed.
