For dough:
6 eggs
A pinch of salt
180g (3/4 cup + 2 tbsp) sugar
180g (1 cup + 1 tbsp) flour

Bake at 180℃ (356℉) for 40 minutes
For the blueberry mousse:
18g (6 tsp) gelatin
120g (1/2 cup) cold water
500g (3 cups) blueberries
2 tbsp sugar
400g (2 cups) cream 33% fat
60g (4 tbsp) sugar
220g (1 cup) cream cheese
For Lemon Mousse:
12g (4 tsp) gelatin
80g (1/3 cup) cold water
2 eggs
150g (3/4 cup) sugar
The zest of a lemon
The juice of a lemon
100ml (2/5 cup) water
40g (2 tbsp) butter
300g (1.5 cups) cream 33% fat
Leave in the fridge for 4 hours
100g white chocolate
