The Dragon Fruit Tempura Waffle | Crisp Vegan Dragon Fruit Waffle with Lime-Agave Glaze (Serves 3) Waffle Ingredients Dry: • ¾ cup oat flour • ¾ cup white flour • ¾ cup cornstarch • 1 tsp baking powder • ½ tsp baking soda • ½ tsp salt Wet: • 2 tbsp Bob’s Red Mill Egg Replacer + 4 tbsp water (let sit 5 min) • ¾ cup unsweetened plant milk (cold) • ¾ cup ice water • 1 tsp apple cider vinegar • 2 tbsp avocado or sunflower oil • 1 tsp vanilla extract • ¾ cup dragon fruit purée • ¾ cup dragon fruit chunks (folded in) • Zest and juice of 1½ limes Instructions: Mix dry ingredients in a chilled bowl. In a second bowl, whisk egg replacer with water and let thicken. Add cold plant milk, ice water, vinegar, oil, dragon fruit purée, vanilla, lime zest, and lime juice. Combine gently with dry ingredients — do not overmix. Fold in dragon fruit chunks. Let batter rest 5 minutes. Cook in a preheated waffle iron until crisp and golden. Makes 3 large waffles. Best served fresh. Can be frozen. Topping: Lime-Agave Glaze • ¼ cup agave syrup • 1 tbsp water • 1 tbsp dragon fruit purée (for color) • Zest and juice of ½ lime • Pinch of salt Instructions: Simmer all ingredients in a small pan over low heat until glossy.
