I mixed the dough before going to bed and put it in the refrigerator to ferment overnight. It took me less than 80 minutes to eat the bread the next morning. Warm water 285ml
Fresh yeast 5g
Wheat flour 280g
Whole wheat flour 100g
Salt 7g
Stir until there is no dry flour
Fold the dough and let it stand for 30 minutes (twice)
Refrigerate and ferment overnight (8-15 hours)
Make bread the next morning
Divide the dough into 3 equal parts
Shape the dough into a rectangle
Relax the dough for 20 minutes
Finally, shape the dough into a loaf of bread
Ferment in a warm place for 30 minutes
Sprinkle a small amount of water on the baking tray
Bake at 230℃ 446℉ for 10 minutes
Remove the lid and bake at 250℃ for the top and 230 for the bottom for 18 minutes
