Dough:
Flour - 280-320 gr
Water (hot) - 100 ml
Butter or vegetable oil - 30 g
Salt - 0.5 tsp
Egg - 1 pc.
Filling:
Potato - 450-500 g
Salt - to taste
Butter - 50 g
Roasting:
Bacon or bacon - 70-100 g
Onion - 1 pc (180 g)
1. For the dough: add salt and butter to water, mix, add 2 tbsp. flour egg (when adding the egg, we do everything very quickly so that the egg does not boil), knead the soft elastic dough. You may need a little less or a little more flour, depending on the size of the egg and the quality of the flour itself. Knead the dough for 5 minutes. Let's rest for 30 minutes.
2. Boil potatoes in salted water until tender. Add butter, knead well with a masher until smooth.
3. Spread the bacon or bacon and fry over low heat to melt more fat. Then add the diced onion and fry until golden brown.
4. Roll out the dough into a layer 3 mm thick. Using a glass or saucer, cut out circles. The diameter of my glass is 9 cm. You can make smaller dumplings. I got 22 large dumplings.
5. Put 1 tsp. with a slide of filling in the center of the dough piece, on the side that was in contact with the table, it is not winded, so the edges will pinch very well. We carefully fasten the edges of the dough, forming a dumpling.
6. We spread the dumplings in boiling salted water (for 2 liters of water - 1 tsp of salt) and stir very gently so that they do not stick. After they float, cook for 3 minutes.
7. Add bacon and onions to the finished dumplings and mix. Enjoy your meal!
