The crust of this bread resembles meringue in texture, and the crumb is exactly like that of classic dough bread. It tastes vaguely similar to egg white (which is quite logical), so I still have to find a way to make it more pronounced. I was so amazed by the result that I completely forgot that there were still three hours left until the end of my “hunger window” and ate half a loaf. Then my son came home from school and took a piece from me and gnawed on it with great pleasure - in my opinion, this is the main indicator of a successful recipe.
