Ingredients:
3 eggs, room temperature
½ tsp vanilla extract
60 g (1/3 cup) light brown sugar
120 ml (about 1/2 cup or 110 grams) sunflower or vegetable oil
50 g honey (about 2 tablespoons)
3 large carrots, grated (about 250 g or 1 1/2 cups, packed)
190 g (about 1 1/2 cups) all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 1/2 tsp ground cinnamon
55 g walnuts, chopped (about 1/2 cup)
Cake Pan Size:
22 x 13 x 7 cm (9 x 5 inches)
Baking Time:
55-60 minutes at 340°F (170°C) in a preheated oven

Prepare the Batter:
1. In a large mixing bowl, whisk together 3 eggs, ½ tsp vanilla, and 60 g (1/3 cup) light brown sugar for 3-4 minutes until the mixture is pale and slightly fluffy.
2. Add 120 ml (about 1/2 cup or 110 g) of sunflower or vegetable oil and 50 g honey (about 2 tablespoons) and stir gently.
3. Add 3 large grated carrots (about 250 g or 1 1/2 cups) and stir to combine.
4. Sift together 190 g (about 1 1/2 cups) all-purpose flour, 1 1/2 tsp baking powder, 1/4 tsp salt, and 1 1/2 tsp ground cinnamon.
5. Add the dry ingredients to the wet mixture and mix on low speed for about 15–20 seconds, just until combined—do not overmix.
