I love this recipe. It brings back happy memories of Princes William and Harry as you boys. I'd serve them with ice cream, usually chocolate and they would sit around the table on a Saturday night at Kensington Palace watching TV and wolfing them down, seeing who could eat the most. Of course, I always had spare in the kitchen. Oh I would love for them both to sit together today over a plate of brownies and ice cream and become friends again.

Chocolate Brownies
Makes 16
1 cup (226 g) unsalted butter
1 cup (170 g) dark chocolate chips
¼ cup (60 ml) brewed espresso
4 large eggs
1 tsp vanilla extract
1½ cups (300 g) granulated sugar
pinch salt
¾ cup (90 g) all purpose flour
1 cup (170 g) dark chocolate chips
Preheat the oven to 350 F (177 C). Lightly grease an 8x10 pan.
Melt the butter and chocolate chips in a large bowl either in the microwave (2 minutes) or over a pot of boiling water. Whisk in the sugar followed by the vanilla, eggs, flour and espresso.
Scrape into prepared baking tray and bake for about 15 minutes. Remove from the oven to cool before cutting.
