This is a bit time-consuming (it needs to steep for a week), but it's not super difficult to make, and it's a fun thing you can bring out to impress your friends.
SERVING SUGGESTIONS:
Drink chilled (neat), or mix with Gin (or, if you must, Vodka) and some Lemon Basil Bitters to make an Old Fashioned Basil Gin/Vodka Cocktail. It's great in a non-alcoholic drink with sparkling water. Garnish with a fresh basil leaf, lightly slapped to release the oils .
INGREDIENTS:
➡️20 oz Vodka
➡️50 fresh basil leaves, cleaned of dirt
➡️1/2 cup granulated sugar
➡️1/2 cup (4 oz) water
EQUIPMENT:
➡️A large glass jar with a lid (non-metal, or use a piece of parchment paper to place between the jar and the seal)
➡️2 small pots
➡️A large bowl of ice water
PROCESS:
1️⃣Fill jar with vodka; set aside.
2️⃣Boil water; set up the ice bath close-by.
3️⃣Blanch basil leaves in boiling water for 1 minute, then quickly remove and plunge into the ice bath for 1 minute; strain in a mesh strainer, gently pressing out the water.
4️⃣Add basil leaves to the vodka, gently shake, then set aside in a cool, dry place for 1 week. Gently shake every other day; the vodka will turn olive green.
5️⃣Strain the basil from the vodka and discard. Return infused vodka to the jar.
6️⃣Make a simple syrup (half cup water with half cup of sugar; boil quickly on the stove until the sugar is dissolved). Add to the jar of basil-infused vodka.
7️⃣The Basilcello is now ready to drink, but is better if you set aside in a cool, dry place at least another 24 hours.
