本期视频跟大家分享一款经典的意式甜品提拉米苏。提拉米苏由马斯卡彭芝士糊和浸满咖啡酒液的手指饼干组成,上面撒上可可粉,苦甜交错,湿润的手指饼干搭配顺滑的芝士糊,非常经典。这个视频中我分享了手指饼干的做法,当然你也可以直接用市售的手指饼干来直接制作,这样甚至不需要烤箱,几分钟就能搞定一份提拉米苏。这个食谱的提拉米苏属于软身版做法,即不添加吉利丁片,所以它整体是比较软的,不适合添加复杂的造型,或者做得特别高。制作这款提拉米苏,你不需要任何模具,随便找个家里的杯子、深盘子、饭盒等等容器,都可以制作,享用时直接从里面挖出来就可以了。
In this video, I am sharing you the classic desert from Italy, Tiramisu. Tiramisu has the perfect balance of sweetness and bitterness, creamy and fluffy texture, with the combination of Mascarpone batter, and lady fingers soaked in coffee liquor.
I also included the recipe of lady fingers. However, you can definitely use store sold lady fingers for a quick and easy dessert. Even though I used a mousse mold for this cake, it is not necessary at all. You may use any deep dish or cup to make this cake and just enjoy it from the cup or scoop it out from the dish. The batter does not contain gelatin powder, so it is relatively soft, which makes the cake cannot support higher structure or complex decorations on top. It is recommended you keep it relativity flat and simple if you want to have the cake stand alone like what I did in the video.

食谱(可制作1个对角线长约9寸,高度5cm左右的方形提拉米苏蛋糕)
手指饼干(可制作18-20根,手指饼干也可以用市售的)
鸡蛋 2个(带壳60g左右一个)
细砂糖15g加入蛋黄
细砂糖30g加入蛋白
柠檬汁 2g
低筋面粉 60g
提拉米苏蛋糕
手指饼干若干(可以自己制作或用市售的)
马斯卡彭芝士227g
蛋黄3个
细砂糖 58g
淡奶油 170g
意式浓缩咖啡80g(可以用10g速溶咖啡粉+70g水代替)
朗姆酒或咖啡酒15g(不饮酒可不加)
Recipe(double or triple the recipe if you want to make a large batch)
Lady Fingers(makes 18-20)
2 large eegs
granulated sugar 15g(1 tbsp), for the yolks
granulated sugar 30g(2 tbsp), for the whites
lemon juice 2g(1/2 tsp)
cake flour 60g(1/2 cup)
For the cake:
Lady fingers 18-20 pieces(you may use store bought ones)
Mascarpone cheese 227g(1 pack)
3 egg yolks
granulated sugar 58g(1/4 cup + 1tbsp)
Heavy cream/ whipping cream 170g(3/4 cup)
Espresso 80g(1/3 cup)
Rum or Coffee Liquor 15g(1 Tbsp), optional if you do not drink
