Tomato 3pcs, make a few cuts on the skin. Blanch it in the wok for 30sec. Set aside to cool and peel away the skin easily. Diced into smaller pieces 2. Ginger 5-6pcs, julienne 3. Enoki mushrooms 1pkt, cut half 4. Egg 1pc, beaten 5. Coriander Seasoning 1. Salt little 2. Sugar little 3. Fish sauce little 4. Potato starch solution 5. Sesame oil little Method 1. Stir fry the ginger, then add in tomatoes and stir fry under high heat. Smashed the tomatoes and add salt and sugar. Cook till tomatoes turn darker colour and then add 2 rice bowl of water. Bring to boil. 2. Add fish sauce and enoki mushrooms. Bring to boil and turn to low heat. Add in potato starch solution and mix well. 3. Slowly add in egg and sesame oil 4. Sprinkle some coriander 5.
