"Ash" means thick soup because it has got lots of ingredients mainly involving grains & vegetables. These two are basics of any "Ash made; then according to the type of Ash you are making, you might go with more different ingredients and methods of preparation. "Ash Reshteh" means thick noodle soup. It's one of the oldest, richest and most delicious Ashes of all. This Ash is served with "Kashk". It is going to be very interesting for you to know that "Kashk" is only found in Iran. This protein rich dairy derived white liquid has a very strange taste for Non_Iranians. It is one of loved dairies produces by Iranian people. You can have a choice of serving Ash Reshteh with or without Kashk. A hot bowl of Ash Reshteh in cold winter day is the most satisfying feelings ever.
