This time, we tried making one of France's traditional sweets, the "Tarte Tropezienne," which was born in the Saint-Tropez region of southern France. It's a refined sweet treat consisting of brioche dough generously filled with cream, enjoyed by many during the summer season. Orange flower water... 20g
Dry yeast... 5g

~Diplomat Cream~

Gelatin... 4g
Milk... 250g
Egg yolks... 3
Sugar... 60g
Vanilla flavoring... 1 teaspoon
Cornstarch... 25g
Heavy cream... 150g

~Syrup~

Water... 70g
Sugar... 30g
Orange flower water... 20g
Powdered sugar (for topping)... As needed
