We're taking an Angus Bottom Round Rump Roast and turning it into two juicy, tender steaks, then searing and cooking them in our Lodge Cast Iron Skillet - https://amzn.to/3sehzmU. First, we sliced the angus bottom round roast into two steaks that we dry brined, tenderized for 4 hours, and seared in a hot skillet. Then, we lowered the heat and cooked the steaks to a perfect medium to medium rare, basting them with butter as we cooked the steaks. While the steaks were resting, we made a tasty Au Jus dipping sauce with the drippings in the pan and added special herbs and seasonings to make the Au Jus taste even better.

⬇️⬇️ RECIPE INGREDIENTS ⬇️⬇️
• 1 3LB Angus Bottom Round Rump Roast - Sliced into 2 Steaks
• Kosher Salt - to Dry Brine and Tenderize the Rump Steaks
• 1 Cup of Dry Red Wine - Drinking Wine not Cooking Wine
• 1 TSP of Black Pepper
• 1 TSP of Garlic Powder
• 1 TSP of Onion Powder
• 1 TSP of Thyme
• Oil for the Pan
👉Cooking Instructions:
• In an oiled cast iron skillet over medium-high heat, sear the dry brine angus rump steaks on all sides, then reduce the heat to medium and finish cooking the steaks to medium rare 125–130°F or done to your liking. Remove from heat, put the steaks on a plate, and let the steaks rest for about 10-15 minutes. While the steaks are resting in the same pan, make an Au Jus. To make the Au Jus, add a half to one cup of dry red wine to the pan, add one teaspoon each of black pepper, thyme, onion powder and garlic powder to the pan with the wine, stirring and simmering for 1-2 minutes. When done to your liking, put the Au Jus steak dipping sauce in a pitcher or small glass bowl and serve with the steaks. Add a side of mashed potatoes topped with butter, parsley flakes, and brown gravy.
