Box 453 Greenwell Springs, LA 70739 EMAIL: [email protected] BAGELS: 1 1/2 cups warm water (105-110F) 2 3/4 tsp instant yeast 4 cups all purpose or bread flour (Plus more if needed) 1 tbsp brown sugar 2 tsp salt 1 egg white for egg wash 8 cups water 1/4 cup honey In the bowl of a stand mixer, whisk together water and yeast and sit for 10 mins. Add flour, brown sugar and salt. Beat on low 2 minutes. Cont mixing for another 6-7 minutes or until your dough has come together. Add more flour 1 tsp at a time if needed while it's mixing. The dough should be tacky, but not stick to your hand. Place your dough into a greased bowl. Cover and let rise 60-90 mins until doubled in size. Once dough has risen, preheat oven to 425F. Cut dough into 8 equal pieces and form into bagels (see video). In a large pot, add 8 cups of water and honey. Bring to boil, then reduce to a simmer. Add bagels and boil for 1 min. Flip and boil another 1 minute. Place them onto a parchment or silicone lined baking sheet. Brush with egg white wash and bake for 20-25 mins. Rotate pan halfway if needed. Let cool completely, place in freezer bags. Thaw on the counter or reheat in the microwave (wrap in damp paper towel to keep from drying out) ENGLISH MUFFINS: 1 1/4 cups warm water 1 tbsp sugar 1 tsp instant yeast 2 tbsp oil 2 3/4 cups all purpose or bread flour 1 tsp salt Cornmeal for dusting In mixing bowl, add the yeast, sugar and water. Mix and let set for about 10 mins. Add oil, salt and flour. Mix in the stand mixer or knead by hand for 5 minutes. If your dough is sticky, add 1 tsp of flour at a time until the dough ball forms. Oil or spray a bowl and add your dough ball. Cover and let sit for about an hour till it doubles. After the dough has risen, divide into 10 pieces and roll into a ball. On a parchment lined baking sheet, sprinkle on a thin layer of cornmeal. Place the balls onto the sheet and press down to about 3/4 of an inch. Spray with cooking spray and sprinkle with more cornmeal. Cover with a towel and let sit to puff up for about 20 minutes. Heat your pan, griddle or cast iron skillet to a medium/low. Please watch your heat because all stoves heat different. Place muffins into the pan, cover and cook for about 9 minutes (keep an eye on them). Flip, cover and cook another 5 minutes. Inside temp should be 200F. Cool completely, place in freezer bags. Thaw on counter then split and toast. TORTILLAS: 3 cups all purpose flour 1 tsp salt 3 tsp baking powder 6 tbsp oil 1 cup warm water Combine flour, salt and baking powder. Add in the oil and water. Mix with a spoon or your hand until dough ball forms. Cover and rest about 15-20 mins. Divide into 16 pieces and form into balls. Cover balls and let rest about 15-20 minutes. Lightly flour surface, add a dough ball, sprinkle with a little more flour, and roll out thin. Place on skillet or griddle heated to medium/low. Once you see little bubbles, flip them over. Cook 1-2 minutes, flip and cook another 30 seconds. You can lightly press with your spatula and then should puff up. Keep them warm while you cook the rest by placing them on a towel lined plate and cover with another towel to keep from drying out. Once they're all done, keep them covered and let them cool a little. Place into a freezer bag. Thaw on the counter and you can soften by wrapping in a damp paper towel and tossing in the microwave for a few seconds. PIE CRUST: (This recipe makes 2, I doubled in the video) 2 1/2 cups all purpose flour 1/2 tsp salt 2 sticks butter 1/4 cup shortening, cold and cubed 2 sticks butter, cold and cubed 6-10 tbsp ice water Mix flour and salt. Cut in the butter and shortening (you can use food processor). Add water 1 tbsp at a time till dough ball starts to form. Divide into 2, shape into a disc, wrap in plastic, place in freezer bag. Thaw in the fridge overnight. PIZZA CRUST: Thaw in fridge overnight. GARLIC BREAD: Cook from frozen at 400F for 8-10 mins. CINNAMON ROLLS: Thaw in fridge overnight. Let sit on the counter while the oven preheats to 350F. Bake 30-35 mins. BREAKFAST ROLLS: Thaw in fridge overnight. Bake at 375F for 15-20 mins. Top with gravy.
